Vietnamese pho met gestoofde kip

Vietnamese pho is a traditional Vietnamese noodle soup that is typically made with beef or chicken. However, if you prefer to use stewed chicken instead, here is a recipe for Vietnamese pho with stewed chicken:

Ingredients:
– 2 chicken breasts
– 8 cups chicken broth
– 1 onion, sliced
– 3 cloves garlic, minced
– 1 thumb-sized piece of ginger, sliced
– 2 star anise
– 2 cinnamon sticks
– 2 tablespoons fish sauce
– 1 tablespoon sugar
– Salt and pepper to taste
– Rice noodles
– Bean sprouts
– Fresh herbs (such as cilantro, Thai basil, and mint)
– Lime wedges
– Sriracha sauce (optional)

Instructions:
1. In a large pot, add the chicken breasts, chicken broth, onion, garlic, ginger, star anise, cinnamon sticks, fish sauce, sugar, salt, and pepper. Bring to a boil, then reduce heat and simmer for about 30 minutes, or until the chicken is cooked through and tender.

2. Remove the chicken breasts from the pot and shred them using two forks. Set aside.

3. Strain the broth to remove the onion, garlic, ginger, star anise, and cinnamon sticks. Return the broth to the pot and bring it back to a simmer.

4. Cook the rice noodles according to the package instructions. Drain and set aside.

5. To serve, divide the cooked rice noodles among bowls. Top with the shredded chicken, bean sprouts, and fresh herbs. Ladle the hot broth over the noodles and garnish with lime wedges. Serve with sriracha sauce on the side for those who prefer a spicier flavor.
